【ミニ＆ミディトマト】
■おやつ感覚で栄養補給
家庭菜園ではこれからが本格的な収穫の季節を迎えるミニトマト。ブドウの房のように実がなり、毎日少しずつ赤く熟していく姿を眺めるのも楽しみのひとつだ。
トマトは大きさ（重量）によって３種類に大別され８０グラム以上を丸トマト（桃太郎など一般的なトマト）、３０～８０グラムをミディトマト、３０グラム以下をミニトマトとして区別している。
丸トマトと比べてミディやミニは糖度がのりやすく、おやつ感覚で手軽に食べられるのが人気だ。現在市場で流通しているミニトマトの主流は 球形の「千果（チカ）」や「キャロル」だが、市場には流通しない高糖度の「ベリースウィート」や、楕円（だ・えん）形で糖度の高い生食用の「アイコ」など がある。色は赤以外に黄色、オレンジとカラフル。
ミディトマトも生産量が増えている。生食として使われる以外に、丸トマトよりも糖度が高くミニトマトより扱いやすいという点から調理に使 われることが多くなっているからだ。今年初お目見えの新品種ミディトマト「シシリアンルージュ」も調理用。この手のトマトとしては同じくイタリア原産のサ ンマルツァーノが有名だが、シシリアンルージュは味が濃厚でまったり感があり、加熱すると特にうまみが際立つのが特徴だ。
ところで、家庭菜園で食べきれないほど収穫できた時にはドライトマトにするといい。湯むきしたトマトを天板に並べて塩を振り、スライスニ ンニクやハーブなどをのせる。低温のオーブンで温めては余熱で乾かすという作業を数回繰り返す。保存する場合はオリーブオイルに漬けておく。うまみが凝縮 され、パスタソースのほかカレーの隠し味などに重宝します！

◆ミニトマト／ミディトマト
ナス科トマト属。原産地やルーツは丸トマトと同じ（アンデス原産で本格栽培は１６世紀に欧州に伝わってから。日本での本格栽培は明治以降）。丸トマトよりも原種に近いと言う説もある。
含有栄養素は丸トマトと同じ、ビタミンＣと糖分は小さいほど高く、旨み成分のグルタミン酸とリコピンはキャロル７（ミニ）、桃太郎８（丸トマト）、カンパリ（ミディ）の順に多いという分析結果がある。
熟したものはポリ袋にいれて冷蔵庫の野菜室で保存する。
