"Fracking" has a new victim: ice-cream. Hydraulic fracturing, the sometimes controversial oil and gas drilling method, is causing tremors in a small but vital corner of the food industry.

Guar gum, produced mostly in India, helps thicken foods ranging from ketchup to ice-cream. Problem is, it's also mighty useful in fracking fluid. With the surge in fracking, demand for guar gum has rocketed.

Having often languished at under 50 cents per pound, guar gum has recently changed hands at over $3, according to IMR International'sDennis Seisun, publisher of the catchy "Quarterly Review of Food Hydrocolloids".

Food manufacturers will have to scramble for guar supplies or seek alternatives as long as the drilling boom continues. For oil majors, guar is a relatively small expense, so their demand looks pretty immune to price. The added bonus for them is that, given fracking's many environmental critics, it's nice to be able to use something so harmless you can eat it.
